Nice whif's but I think the wing loading might be getting a bit high by the last one, though. ;)

I still wish to "steampunk" the Bristol Fighter, Sopwith Camel, and a parasol version of the Albatross D.V all in 1/32.

The Bristol Fighter, by the way, is my stand-out favourite aircraft of WW1, with the Sopwith Camel a short stone's-throw behind it.

Does anyone know if there was ever a 2 seat variant of the Fokker Eindecker? I am thinking as a trainer of sorts.

I'll need to go through my references, but I'm sure that the early eindeckers at least, had enough room in the cockpit fot two crew, even if they didn't have two seats as such, the crew instead sat astride a bench arranged fore and aft in the fuselage.

The one-off prototype Fokker M 6 two-seater was based on the airframe of the M 5 prototypes for the E 1 fighter. However, the wing panels were raised to the fuselage top-frames (making it a bit trickier for modelling).
