To start with, what about a refeuling tanker?  or Perhaps an Air Force 1 version?

Another option that I half suspect will come to reality in the next decade might be a RNZAF version (supported by AirNz which already operates them - see below):



I am tempted to pre-empt this by using some decals from a RNZAF 757:



and a Zvezda kit:

I've got a Revell 1/144 787 surplus to requirements, I got it for another project I have in mind but once I got it home, realized I really needed a 1/100 scale kit.
